THE KAYMAK STORY
Three masters taught the brothers Ömer and Mehmet how to make yoghurt, cream, ice cream and lokma. Their two families worked side by side for forty years. Ali Hüseyin has run KAYMAK since Ömer transferred the business to him in 2023. Today, Ali also makes lokma at KAYMAK.

The two brothers opened the business together in Komotini.
A master yoghurt maker taught them how to make yoghurt. Another master, who was preparing to move to America, taught them how to make cream and ice cream. A third master, described as the first person to make lokma in Komotini, taught them lokma.
From 1958 to 1998, Ömer and Mehmet ran KAYMAK with both families working alongside them.
Mehmet died in 1998. Ömer continued the business they had opened together until 2023.
Ömer transferred the business to Ali Hüseyin, whom he loved like a grandson. Ali now carries on the work with the same care. He also makes lokma at KAYMAK.
